民國26年台北州告示第四十八號認可設立「台北州公立新莊農民學校」。民國34年正名為「台北縣立新莊初級農業職業學校」。民國41年學校正式成立，並民國42年校址由五股鄉遷至三重埔。民國49年易名「台北縣立新莊農業職業學校」，民國52年校址由三重埔再遷至泰山鄉現址。民國57年更名「台灣省立新莊高級中學」，開辦高級農業部，設農產製造、園藝、農村家事科；並增設高級工業部，設機械、電工、電子設備修護科。民國58年擴建教學大樓六間，工科實習工廠三棟，以應教學及學生實習需要。民國61年增建科學館一棟，以加強物理、化學及生物實驗（現為自強樓）。民國63年起高級農業部停招。民國68年更名「台灣省立泰山高級中學」，是年8月1日起正名。
